Origins of Lake Deborah

Lake Deborah natural lake salt is a jewel of nature. The salt originates from ancient primeval oceans carried on the winds of time. The lake from which the salt is harvested was formed around 5 million years ago.

It is the original alternative to sea salt.

As the salt originates from primeval oceans and ancient salt-river systems, the salt crystals contain many trace elements such as calcium ; magnesium; iron and potassium - the combination of which contribute greatly to the "finger-print" of the salt's character and are essential for human health.

How Lake Deborah is Harvested

Our method of harvesting is one of the most truly sustainable methods. This is because we harvest in the natural seasonal cycles of the salt lake. The rainfall over the winter months dissolves some of the crust of the lake. It also lifts the water table level, bringing very old salt to the surface of the lake in the form of brine. The summer sun evaporates the brine, new salt crystals form and fall to the surface of the lake. When the new season's crop of salt crystals dries, we simply collect them by scraping them from the surface of the lake. Winter rain makes new brine. Summer sun evaporates the brine and salt crystals form and so the seasons repeat this entirely natural process.

There is practically no invasive development of the local environment. Whereas sea salt manufacturing requires great areas of land to build artificial evaporation ponds.

Unlike processed sea salts which often have a harsh and bitter aftertaste, Lake Deborah natural lake salt has a natural depth of flavour, which proves to be an economical and healthier option for today's consumer.

Why is Lake Deborah natural lake salt's flavour so different?

Sodium Chloride salt crystals are almost entirely cubed shaped, made up of uniform "building blocks" consisting of Na+ and C1- particles. However, Lake Deborah natural lake salt crystals are often irregularly shaped due to the presence of other elements such as magnesium, calcium, iron and potassium.  

The presence of these other particles and the irregular shape of the salt crystals ensure that the flavours of the salt are released into solution quickly and harmoniously; generating a gentle but complex "saltiness" to the tastebuds.

Health Aspects of Lake Deborah natural lake salt

Most of the salt produced in the world today is supplied to the chemical industry.   

Practically all of this salt is produced from sea water which is processed using various chemical agents to remove all the inherent trace minerals found naturally in sea water. This is due to the chemical industry's demands that the finished product, sodium chloride (salt) contains minimal quantities of the natural elements found in salt.

This "sea salt" product is prevalent in the human food chain with its harsh and bitter aftertaste, which is not very palatable to the hunan body.

Lake Deborah's Carbon Footprint

  • Lake Deborah's salt gathering is likened to Organic farming using the summer sun for the solar evaporation of the lake salt brines.
  • Other salt manufacturing methods, particularly salt flakes and ion exchange, require salt water to be heated to very high temperatures thereby creating significant CO2 emissions.
  • Lake Deborah's natural production methods create only 1/6th of the greenhouse gas emissions that are produced by the ion exchange process.

Greenhouse gas emissions are the biggest environmental problem facing humanity. This is why Lake Deborah is at the forefront of demonstrating the benefits of our completely natural production methods which create 1/6th of the green house gas emissions (CO2) that are produced by the ion exchange process.

Our salt gathering can be likened to organic farming where no artificial chemicals or fertilizers are used and our harvesting operations follow the natural seasonal cycles of the salt lake. Every year, winter rains take up a fraction of the lake's salt crust in solution to make new brine; summer sun then evaporates the brine and a new crop of salt crystals form and is harvested, and so the seasons repeat this entirely natural process.

Other salt production such as the manufacture of salt flakes, ion exchange or Vacuum salt and some regular processed salt products require the salt water to be heated to very high temperatures. To achieve this, vast amounts of energy are used in the process. 

Lake Deborah natural lake salt welcomes carbon labeling because we can clearly demonstrate that our salt production methods are one of the most environmentally friendly in the world. For this reason Lake Deborah commissioned external accredited consultants to carry out a "Life Cycle Analysis" stipulated in ISO standards 14040:2006 and 14044:2006 which has determined the following Carbon Footprint for our products:
